A Size Exclusion HPLC Method for Evaluating the Individual Impacts of Sugars and Organic Acids on Beverage Global Taste by Means of Calculated Dose-Over-Threshold Values

چکیده
In this work, the main organic acids (citric, malic and ascorbic acids) and sugars (glucose, fructose and sucrose) present in commercial fruit beverages (fruit carbonated soft-drinks, fruit nectars and fruit juices) were determined. A novel size exclusion high performance liquid chromatography isocratic green method, with ultraviolet and refractive index detectors coupled in series, was developed. This methodology enabled the simultaneous quantification of sugars and organic acids without any sample pre-treatment, even when peak interferences occurred. The method was in-house validated, showing a good linearity (R > 0.999), adequate detection and quantification limits (20 and 280 mg L−1, respectively), satisfactory instrumental and method precisions (relative standard deviations OPEN ACCESS Chromatography 2014, 1 142 lower than 6%) and acceptable method accuracy (relative error lower than 5%). Sugars and organic acids profiles were used to calculate dose-over-threshold values, aiming to evaluate their individual sensory impact on beverage global taste perception. The results demonstrated that sucrose, fructose, ascorbic acid, citric acid and malic acid have the greater individual sensory impact in the overall taste of a specific beverage. Furthermore, although organic acids were present in lower concentrations than sugars, their taste influence was significant and, in some cases, higher than the sugars’ contribution towards the global sensory perception.

The Effect of Rootstocks on the Sugars, Acids, Carotenoids, Chlorophylls and Ethylene of Clementine Mandarin (Citrus clementina)
Investigations have demonstrated that ratio of sugars to organic acids affects the particular taste of citrus fruit and carotenoids are essential for prevent of the disease. It seems that some rootstocks enhance the ripening of fruits and stimulatethe biosynthesis of sugars and carotenoids. The aim of this study was to evaluate the effect of rootstocks on sugars, organic acids andcarotenoids o...

Introduction: Irregular/blocked fields are routinely used in radiotherapy. The doses of these fields are usually calculated by means of equivalent square method that is inherently prone to uncertainty. On the other hand, Clarkson’s sector integration method is a dose calculation method which offers far better accuracy in dose calculation of irregular fields. The Scatter Air Ratio (SAR) of an in...

This study aimed to evaluate the effect of rootstocks on fruit sugars, organic acids, and carotenoids. The contents of sugars and organic acids in fruits were determined by HPLC. Total acidity (TA), total soluble solids (TSS), and pH value of the juice were also evaluated. Total carotenoids and chlorophylls contents were measured using a spectrophotometer. The content of ethylene in fruits was ...

In the present study, we identified free amino acid (FAA) contents and chemical composition in four populations of Salmo trutta macrostigma living in Mediterranean region of Turkey. In addition, taste impacts of FAAs were evaluated by taste active values. Moisture, protein, fat and ash content were found in the ranges of 75.49 - 79.59 %, 16.94 - 19.97 %, 1.58 - 3.75 % and, 1.39 - 1.56 %, respec...
